Chef Steven Molnar always intended to cook French food, that is until he took over a Mexican restaurant in Toronto and a research trip to Oaxaca changed his career path for good. As chef of Michelin-starred Quetzal, one of North America’s 50 Best Restaurants, he’s teaching ancient recipes and techniques to his fine dining crew, and they’re doing it all over live fire.
At the same time, Molnar is teaching a whole city how to appreciate a cuisine they’d never considered haute. His motto? Embrace and elevate the traditional ways, and always with respect.
